We’re celebrating the weekend with some boozy Tiki cocktails that have one delicious thing in common: orgeat syrup. Orgeat is made with almonds, sugar, water, and orange blossom water. Orgeat Syrup2 cups blanched almonds11/2 cups sugar11/4 cups water1 teaspoon orange blossom water1 ounce brandy

  1. In a saucepan, cook water and sugar until sugar dissolves and the mixture comes to a boil.
  2. Add almonds and simmer on low heat, stirring.
  3. Remove mixture from heat before it comes to a boil. Cover and let stand three hours or overnight.
  4. Strain through a cheesecloth, squeezing the cloth to extract as much of the mixture as possible.
  5. Stir in orange blossom water and brandy.
  6. Store in a glass jar in the refrigerator for up to two weeks.
Mai Tai1 ounce lime juice1 ounce dark rum1 ounce light rum½ ounce Cointreau1 ounce orgeat

Combine ingredients in a shaker filled with ice, shake, and strain into a tall, ice-filled glass.

Orgeat Lemonade1 ounce lemon juice2 ounces orgeat3 ounces water

Combine ingredients in a shaker filled with ice, shake, and strain into a tall, ice-filled glass.

Royal Hawaiian11/2 ounces gin1 ounce pineapple juice¾ ounce orgeat syrup½ ounce lemon juice

Combine ingredients in a shaker filled with ice and strain into a frozen coupe glass.
