Baked Shrimp on Hoppin' John

3 pounds large shrimp, peeled and deveined
½ teaspoon salt
½ teaspoon freshly ground pepper
Lemon-Herb Butter, softened
Hoppin' John

Place shrimp in a large baking pan. Dollop with Lemon-Herb Butter. Bake at 400º for 10 to 12 minutes or until done. Serve over Hoppin' John. Makes 6 to 8 servings.
