The best lobster is fresh lobster, so that means cooking your own for this recipe. For convenience, have the fish market steam one for you. Once cool, shell and coarsely chop the meat from the claws and tail. You can also use all tail meat for this recipe. It takes about three lobster tails to get a pound of meat.
