Large salmon fillets may contain pin bones; most fish markets will remove them for you, but you can also do it yourself with needle-nose pliers or fish bone tweezers. Run your fingers down the fillet, starting at the head and moving toward the tail—pin bones run at an angle, toward the head, so you won’t feel them if you swipe your hand in the other direction. Pull out the bone at the same angle; if you remove it straight up, you may tear the tender flesh.
