The new look at this former Ritz-Carlton south of Palm Beach reflects Adler's smart and playful hand, with sun-soaked blues and yellows in bold patterns, botanicals on the padded headboards, and lovebirds on the beds' throw pillows. The rooms feel luxuriously homey: A pickled-oak credenza with a modern Chinoise vibe looks like a one-of-a-kind piece, while a poster-size photo of a budgie and coffee mugs with his-and-her bas reliefs— a mustache on one side, lips on the other—are full of personality. Adler (who lives up the road from Eau Palm during the season) says he blended Capri, Santorini, and Palm Beach for this vision; his ménage à trois is just right. Who wouldn't want in on this party?

The reimagining of the resort's 309 guest rooms, as well as its suites and corridors, amplifies Eau Palm Beach's extant charms—a beautiful strand of Atlantic-facing white sand, a pair of excellent restaurants, and the Eau Spa. At 42,000 square feet, this is the kind of place you can spend the entire day hiding out in, whether enjoying an aromatherapy bath/scrub massage/ facial trifecta in a personal spa villa, or just sipping Champagne and catching up on your magazines on a canopied daybed in the courtyard garden.
