The crazy flavor has a cult following at this Maine scoop shop.

Lobster rolls, lobster quesadillas, lobster beer. We've tried and loved just about every crustacean iteration, but have never encountered it in a frozen dairy dessert—until now.

Ben & Bill's Chocolate Emporium has crafted the ultimate seafood-meets-sweets creation in its Bar Harbor, Maine, scoop shop. The creamery dreamed up the flavor as a way to demonstrate that its ice cream is made in-house (because where else can you get a scoop studded with fresh lobster meat?). And while the homemade flavor is avant garde, the real surprise might be its popularity.

According to the shop's website, "During peak season, hundreds of people daily sample this ice cream and it is one of our most popular items for shipping."

To make its lobster ice cream, Ben & Bill's douses chunks of local lobster meat in butter and then churns it into a butter pecan base. Watch the flavor come together below:

If you're not sure whether to be grossed out or delighted, think of other popular salty-sweet combinations, like chocolate and pretzels. The same concept is at play here with the savory flavor of the lobster balancing the sweeter notes of the ice cream.
