Preheat oven to 400°F. Heat oil in a 10-inch cast-iron or ovenproof skillet over medium. Add chickpeas; cook, stirring often, until toasty and slightly caramelized, 6 to 8 minutes. Spread chickpeas in a single layer, and place skillet in oven.
Roast chickpeas, shaking skillet occasionally, until chickpeas are brown and crispy, 15 to 20 minutes. Remove from oven. Sprinkle with salt and pepper, and stir in parsley. Let cool slightly.
