At the heart of an Allen’s and Milk—Maine’s beloved highball—is Allen’s Coffee Flavored Brandy. At Portland Hunt + Alpine Club, owner Andrew Volk’s homage nixes the splash of milk and pairs the “Champagne of Maine” with white rum and a shot of local Tandem Coffee Roasters espresso.
3 tablespoons cold, brewed espresso or cold coffee concentrate
2 tablespoons (1 oz.) coffee-flavored brandy (such as Allen’s)
1 ounce white rum (such as Plantation 3 Stars)
2 tablespoons simple syrup
How to Make It
Place all ingredients in a cocktail shaker, and add ice. Cover with lid, and shake vigorously until well chilled, 30 to 45 seconds. Double strain into a chilled martini glass.
