How to Make It

Stir together Mediterranean tonic (such as Fever-Tree), gin, white port, and orange bitters in a tall glass. Firmly hit 1 mint sprig against the palm of your hand to release oils, and swirl in the drink 10 seconds. Discard mint. Fill glass with ice, and garnish with a persimmon slice.
