Pretty pink icing meets the cutest cookie cutter ever in these kid- and adult-friendly pink flamingo cookies from Pie Crust and Pixie Dust. We could see these sweet treats as the star of a baby shower or birthday party.

How to Make It

Step 1

Preheat oven to 350 degrees.

Step 2

Combine butter and sugar. Add eggs and combine. Stir together flour, baking powder, and salt in a bowl and add it slowly to the butter mixture, mixing until blended.

Step 3

Place dough on parchment paper, and refrigerate for one hour.

Step 4

Once chilled, roll out cookie dough onto a floured surface, and cut into shapes with a flamingo cookie cutter. Place on a cookie sheet lined with parchment paper, and bake for 8-10 minutes.

Step 5

While cookies bake, make a batch of citrus royal icing by combining confectioners' sugar, meringue powder, water, lemon juice, and pink food coloring.

Step 6

Decorate the cooled cookies with royal icing. We use clear squeeze bottles, but piping bags or a paint brush also work well.

Step 7

For the flamingo wings, melt white chocolate with a drop of pink food coloring in the microwave for 90 seconds. With a paintbrush, paint strokes of melted chocolate on parchment paper. Let cool, and adhere to cookies with a dab of corn syrup.
