No need to don snorkeling gear to cavort with these cute cakelettes. Pie Crust and Pixie Dust's sea creature creations are perfect for baking with kids.

How to Make It

Step 1

Preheat oven to 350 degrees.

Step 2

Combine butter and sugar. Slowly beat in eggs. Add vanilla extract. Combine dry ingredients in a separate bowl, and add to wet mixture. Combine and bake in small greased cake pans (we like this mini muffin top pan) or small silicone baking molds (we like this one), for 10-15 minutes, or until golden brown on top.

Step 3

For the frosting, use the paddle attachment with a stand mixer to whip butter for 1-2 minutes. Sift confectioners’ sugar and (slowly) add to the butter.

Step 4

Once confectioners’ sugar is incorporated into the butter, begin whipping on high for 3 minutes or until the frosting is fluffy. If your frosting is too runny, continue whipping on high to add more air. 

Step 5

For decorating, cut two sides off of cool, circular cakes, to create the look of a sea turtle shells.  Spread key lime frosting on cakes with a small knife or spatula. We used Jordan almonds and green Wilton white chocolate candies for decorating our turtles, and attached them with a dab of corn syrup.
