The Epically Good Dip I Serve At Every Super Bowl Party

I remember the first time I had caramelized onion dip. A friend made it for a Super Bowl party a few years back and I couldn’t stop gushing over how delicious it was. As a fan of caramelized onions, cream cheese, and sour cream, it’s everything I want to dip my chips. Cut to the first time I served it at a Super Bowl party: the dip and I were the most popular kids there. I’ve been making it for every Super Bowl party since.
Back in the day, onion dip meant ripping open a packet of Lipton (Onion Recipe Dip & Soup) Mix and stirring in some sour cream. Satisfying, to be sure, but taking your time with our ultimate onion dip recipe pays off. Here's how to make it:
The very first step, caramelizing the onions, is worth every minute. Cooking onions in butter over a gentle heat is what gives this dip the depth and richness that make it irresistible. Start with a couple sliced onions and a knob of butter. Cook, stirring often, until softened and beginning to brown. When that happens, add a splash of water and stir, stir, stir, until it evaporates and the onions are a deeper shade of golden. Repeat this process until the onions are shiny, soft, and sweet, about 30 minutes. Let them cool to room temperature—but, guys, this is pretty much all it takes. Pro tip: if it’s really close to kickoff and you just decided you want to whip this up, add a pinch of sugar to the onions. It’ll help them caramelize faster.
Once the onions are cooled (and you’ve resisted snacking on them), mix them in a bowl with softened cream cheese and tangy sour cream. Mix in a couple large pinches of chopped chives and season with salt and pepper. Chopped scallions work as well, and I sometimes like a dash of Worcestershire sauce. Serve with perfectly salted crunchy chips for the best Super Bowl dip that exists.
