Take your summer meal plan up a notch with these fresh and light Everything Smoked-Salmon Summer Rolls. The possibilities for salmon might be endless but, somehow, we still manage to fall into the same old rut: season, bake, eat. Keep things interesting with our handheld rolls and be sure to finish with the tangy crème fraîche dipping sauce—it's not to be missed.

How to Make It

Step 1

Pour hot water to depth of 1 inch into a large, shallow dish. Dip 1 rice paper sheet in hot water to soften, about 20 seconds.

Step 2

Place softened rice paper on a flat surface. Place 2 lettuce leaves in center of rice paper; top with 1 oz. smoked salmon slices, 5 cucumber batons, 4 avocado slices, 6 radish slices, 1/2 tablespoon each of cilantro and basil, and about 1/2 tablespoon of Everything Bagel Seasoning. Fold sides over filling, and roll up, burrito style.

Step 3

Place roll, seam side down, on a serving platter. Cover with damp paper towels to keep from drying out. Repeat procedure with remaining rice paper and filling ingredients, refreshing hot water as needed.

Step 4

Stir together crème fraîche, lemon zest, and lemon juice. Serve with rolls.
