Take a note from summer entertaining guru Jenny Rosenstrach and serve this melty amalgam of sharp Cheddar, Granny Smith apples, and Dijon mustard after a long day on the beach.

How to Make It

Heat a cast-iron skillet or grill pan to medium-low. Spread 1 side of each piece of bread evenly with butter. On the other side of 1 slice, spread mustard, then top with 1 slice of cheese, apples, then another 2 slices of cheese. Top with the second piece of bread, buttered side up. Fry on both sides until the cheese is melted and the bread is toasted and golden, about 4 minutes per side. Let rest 1 minute. Cut in half and serve with Coke or your favorite "vacation-only" soda.
